
SHIKI, located in Vienna’s First District, is delighted to welcome Hiroki Takahashi as its new Sushi Master. With his many years of experience and remarkable expertise in fine dining, he will now enhance the team and enrich the culinary offerings of the Japanese Fine Dining Restaurant with extraordinary finesse.
Originally from Japan, Takahashi initially embarked on a path in the field of business, earning his Bachelor’s degree in Economics from Senshu University between 2000 and 2004. However, it was his deep passion for gastronomy that ultimately led him to the prestigious Futaba Professional Dietitian College in Tokyo, where in 2007 he laid the foundation for an exceptional culinary career.
That same year, his professional journey began at the Palace Hotel Tokyo, where he worked at the exclusive KEYAKI 欅 restaurant and simultaneously gained further experience at Sushi Sen.
In 2008, Takahashi found a new home in Vienna, joining the Grand Hotel Wien as Chef de Partie at the Japanese restaurant Unkai 雲海, where he impressed guests with his culinary artistry until 2015. He then took on a key role as Sous Chef at Nihonbashi 日本橋, a position he held for nearly a decade.
Now, Takahashi brings his culinary excellence to SHIKI, where he continues to share his deep-rooted passion and refined skills.
